At the El Paèl Restaurant in Canazei you will find the carefully researched stories of the people I met on my journey, at the various tastings, who, with their dedication and their professionalism, have managed to convey an emotion to me.
I have deliberately limited the choice to 400 Labels. This allows me to better manage the stock and, at the same time, be in a position to offer our Guests several different vintages of the same wine making it possible to appreciate its development over time.
In addition to bubbles in general, I have a particular passion for Pinot Noir and Riesling, at least 15/20 of which are always included on the wine list. Trentodoc‘s range is always broad, carefully chosen and “fizzing”; I am a particular fan and proud ambassador for their “Bollicine di Montagna [Mountain Bubbles]”.
I believe that my job as Sommelier is not simply to help you choose a bottle of wine but also to introduce you to our territory, where producers work to convey their passion for their land and vineyards through their product.
